Ceviche of Shrimp
2 lbs. Shrimps or prawns
(or 1 lb Shrimps and 1 lb White fish, skinned and cleaned)
5 cups water
2 1/2 cups lime juice
2 red onions, chopped
2 tablespoons soy sauce
salt & pepper
2 cucumbers, seeded, skinned, halved lengthwise and cut into half moons
1 red pepper, seed and thinly sliced
1 bunch of dill, chopped
Tabasco sauce to taste
lime wedges to garnish
Place the shrimps in a large bowl. Mix the
ingredients for the marinade together (water, lime juice, red onions, soy
sauce, salt and pepper) and pour over the shrimps. Marinate for 20
minutes.
Add the cucumber, pepper slices and dill.
Toss. Spoon on to plates or into small bowls. Sprinkle with
pepper and Tabasco sauce. Serve with the lime wedges.
