Mix together the butter, sugar, and vanilla. Stir in flour and salt to make stiff dough. Mix in pecans. Chill dough. Roll into 1" balls. Place on un-greased baking sheet (cookies do not spread). Bake at 400°F for 10-12 minutes or until set, but not brown. While still warm, roll in confectioners' sugar. Cool. Roll in sugar again. |
