Heat oven 350°F. Have ready a 10" x 15" jelly roll pan. Blend butter with powdered sugar, 2 cups flour, and salt. Pat evenly into pan; bake for 20 minutes. Slightly beat eggs and add granulated
sugar, flour, lemon juice and lemon rind. Mix thoroughly; spread over
baked crust. Bake for 25 minutes. Cool, then cut into squares.
Removed from pan to dust with sifted powered sugar. |
