Lemon Squares
 
1/2 pound butter, softened
1/2 cup powdered sugar
2 cups flour
dash salt
4 eggs
2 cups sugar
6 tablespoons flour
6 tablespoons fresh lemon juice
6 tablespoons finely chopped lemon rind

Heat oven 350°F. Have ready a 10" x 15" jelly roll pan.  Blend butter with powdered sugar, 2 cups flour, and salt.   Pat evenly into pan; bake for 20 minutes.

Slightly beat eggs and add granulated sugar, flour, lemon juice and lemon rind.  Mix thoroughly; spread over baked crust.  Bake for 25 minutes.  Cool, then cut into squares.  Removed from pan to dust with sifted powered sugar.
