Almond Lace Cookies For
a curved shape, drape warm cookies over a rolling pin or baguette mold; cool
completely.
1/3 cup light brown sugar
1/4 cup (1/2 stick) butter
1/4 cup light corn syrup
1 tablespoon heavy cream
1 teaspoon Amaretto Liquor (or Vanilla extract)
1/2 cup all-purpose flour
pinch salt
Preheat oven to 325°F. Grease 2 baking sheets.
In a medium saucepan, mix together brown sugar, butter, corn syrup, cream, and
Liquor. Cook over medium-high heat until butter has melted and sugar has
dissolved. Stir in flour and salt until batter is smooth.
Drop batter by1/2 teaspoonfuls onto prepared baking sheets, 2 inches apart. Bake
cookies until golden and thin, 8 to 10 minutes.
Transfer baking sheets to wire rack to cool slightly. Transfer cookies to rack
to cool completely.
