Cucumber Salad
This is one of the eight German salads we serve at our annual Oktoberfest.

4 medium cucumbers, scored, split, seeded and sliced
2 1/2 teaspoons salt
2 medium onions, thinly sliced
1 tablespoon sugar
1 tablespoon vinegar
black pepper to taste

Salt cucumbers and let stand about 1 hour.  Pour off juice and mix remaining ingredients together. Chill 4-6 hour.
