Cottage Tea

We frequently service Cottage Tea as an appetizer drink with hors de oeuvres.  It's a great non-alcoholic alternative that provides a surprising refreshment.  Being inspired by and English version of Beef Tea, we develop this warm drink for a winter party in 1990. It became a part of  the trademark "complimentary appetizer" when I help start Carey Cottage in Fremont, Nebraska in 1992 -- as well as drawing it's name for the cottage.

8 cups boiling water
6 tablespoons loose Earl Gray Tea
6 cups White Grape Juice,
       room temperature

Brew tea for several minutes.  Strain and add with grape juice.  Serve very  warm -- but not hot.  Makes 14 cups.  56 servings. 4 oz. serving.
