Banana Muffins

This simple recipe makes nice moist muffins that have a nice crown and are easy to remove from the muffin tin -- even without using muffin papers. (Actually, muffin papers are a waist with the recipe.) Make about 18 muffins.

1/2 cup shortening
1 1/2 cups sugar

2 1/2 cups flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon salt
---------------------
1/4 cup sour milk or butter milk
1 cup mashed bananas
1 teaspoon vanilla
2 eggs
Chopped nuts, optional

Grease muffin tins with spray shorting. (I use one 12-holer and one 6-holer.) Cream shortening and sugar together, then add dry ingredients. Add bananas, milk, eggs and vanilla. Mix and spoon into prepared muffin tins. Bake at 350°F degrees for about 25 minutes.
