“Southwestern”
Sausage & Cheese Casserole

From Nathan's Sister-in-law Christine Kramer via Marilyn Smith. (Christine served this for the Kramer Christmas on the farm in 2006.) 

2 cans (7-ounce) chopped green chilies
6 corn tortillas cut into 1/2–inch strips
1 pound hot Italian sausage, cooked
2 cups shredded Monterey jack cheese
1/2 cup milk
8 eggs
1/2 teaspoon onion salt
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic salt

Grease 9x13-inch dish & layer 1/2 of chilies, 1/2 tortilla strips, 1/2 of sausage & 1/2 of cheese. Repeat. In medium size bowl beat milk, eggs & seasonings. Pour over casserole. Sprinkle with paprika. Cover with plastic wrap and refrigerate overnight. Bake at 350° F 45-55 minutes. Serve with sour cream & salsa.
